To avoid the crowds in Maremma, aim for the second half of September or May ; to swim with still summery weather, choose September instead. In July and August, especially around the August 15, the beaches and coastal roads are far busier. In Grosseto, average highs are around 27 °C in September and 24 °C in May, but September is also rainier than early summer.
June is a good compromise if you go on weekdays and rather at the beginning of the month: the days are already warm, but the Italian school holidays are not yet in full swing. On the other hand, in May, the sea can still seem cool for long swims. October is quieter for the villages, walks and the countryside, but some beach facilities and seasonal activities reduce their hours or close; the weather also becomes less reliable.
For a specific beach like Cala Violina, check the rules before you go: access is limited to 700 people per day during the summer period and booking is required. Even off-season, favor weekdays and arrive early at the best-known sites: "fewer people" does not always mean an empty beach.
