Yes, you can generally eat wild boar if you have high cholesterol, provided you choose a lean portion and don't make it a frequent dish. The fat content varies depending on the cut and preparation: remove visible fat, favor oven or grill cooking and avoid serving it with charcuterie, butter or a cream sauce. A portion of about 100 à 150 g can serve as a guideline, but your needs depend on your health condition and your overall diet.
The key point is above all to limit saturated fats, which can raise LDL ("bad") cholesterol. A very fatty wild boar stew or a wild boar sausage is therefore not equivalent to a simply grilled lean cut. If your cholesterol is very high, if you have already had a cardiovascular problem or if your doctor has given you a specific diet, follow their instructions and ask them what frequency suits you.
Finally, for wild boar, cooking also matters for food safety: choose inspected meat and eat it well cooked, not raw or pink in the center. Cooking does not change its effect on cholesterol, but it reduces the risk linked to certain parasites present in game.
