Comment on noteThe wine
Imagine for a moment Tuscany, not under the bright sun of the vineyards, but in the cool half-light of an ancestral cellar. It is there that this treasure is born, a Vinsanto del Chianti Classico Occhio di Pernice that whispers stories of patience and tradition.
In the heart of Chianti Classico, a region you may know for its powerful reds, lies Colombaio di Cencio. It is here, in this blessed terroir, that grape varieties such as Sangiovese and Malvasia are cultivated with care. This Vinsanto, 2011 vintage, is the fruit of a long wait, of passed-down know-how and of generous nature.
Its color, with a ramato hue, is already a visual promise of a sensory experience. On the nose, you will discover a complex bouquet where notes of dried fruits, honey and spices mingle, an invitation to travel. On the palate, the complexity is confirmed: candied apricot, honey and hazelnut intertwine, balanced by a delicate acidity that brings freshness and prolongs the pleasure. The appassimento method of the grapes, dried on racks, and a slow fermentation in wood, followed by aging of at least three years in barrels, give this wine a remarkable depth and finesse.
This Vinsanto is a true celebration on its own, but it reveals itself fully when shared. I recommend serving it with dolci secchi, those traditional Tuscan biscuits, or of course, with the unmissable cantucci. It also pairs wonderfully with aged cheeses, especially blue cheeses, or desserts made with dried fruits. It is the ideal companion for a sweet and meditative end to the meal, an invitation to extend the conversation and savor every moment.
