In Maremma, «white wine» covers different styles and terroirs: Vermentino, very present in the province of Grosseto, falls under the Maremma Toscana DOC, while the Bianco di Pitigliano DOC tells the story of the tufa hill hinterland. This appellation, recognized in 1966, rests notably on Trebbiano toscano, locally called Procanico, and also includes sparkling versions and Vin Santo. In Pitigliano, the caves carved into the tufa are part of the wine-growing landscape; around the village, the cliffs and Etruscan paths give the tasting another dimension.
At the table, a fresh white naturally accompanies the fish of the coast and the bottarga of Orbetello, a specialty of the lagoon; a more structured Vermentino can also keep company with fresh cheeses, such as marzolino. To link wine and stroll, Sorano is located about 10 minutes by car from Pitigliano. Plan good shoes and water if you set off to explore the vie cave, those paths carved into the tufa: the advice is particularly useful in hot weather. Harvests and availability vary by estate; it is best to check the opening hours before hitting the road. Among the sheets in the selection, Bianco di Toscana IGT offers another landmark for exploring the region's whites.
