Vin Santo, in Maremma, is the dessert wine par excellence, often served with cantucci. Forget the clichés about sweet wine: here we're talking about a concentrated product, made from grapes dried on racks or hung up, then fermented and aged for a long time in small wooden barrels, the caratelli. Each producer has their own recipe, so you'll find variations in color, from golden to deep amber, and in sweetness. It's a wine of patience, which tells you the story of the terroir with every sip. Don't miss it to round off a good local meal.
