I would choose Cala Violina, near Scarlino, between Follonica and Punta Ala: the water is generally crystal clear, in a small cove lined with maquis. From the Pian d'Alma parking lot, you have to reach the beach on foot; you cannot park by the water. In summer, plan your visit in advance: from June 1st to September 15th, access is limited to 700 people per day and the reservation costs 1 €. There is no lifeguard, so be careful if the sea is rough.
If you are mainly looking for very clear water and rocky coves, also look towards the island of Giglio, south of the Maremma: the ferry leaves from Porto Santo Stefano, and the beach of Cannelle is accessible from the port. For a larger, wilder beach on the mainland, Marina di Alberese and Collelungo are good options, but access to Collelungo is on foot. In short: Cala Violina for an easy-to-find sandy cove; Giglio if you are willing to take the boat to explore a more rugged coastline.
