Comment on noteThe wine
Imagine for a moment a journey through time, a window open onto the history of Tuscany. This wine is not just a bottle, it is an encounter with heritage and patience, an invitation to explore flavors that have matured with grace. Let me guide you through this treasure.
Cabreo Il Borgo was born in the heart of Chianti Classico, on the lands of Vigneti Tenute del Cabreo, property of the Folonari family, in Greve in Chianti, more precisely in the localities of Zano and Panzano. It is here that Sangiovese, the region's emblematic grape variety, unites with Cabernet Sauvignon and Merlot, in a synergy that gave birth to the wines known as "Super Tuscans". The 1985 vintage I am presenting to you is a testament to this tradition, crafted with fermentation in steel tanks and maceration of about four weeks to extract all the richness of the berries.
When you pour it, you discover an evolved robe, with orangish reflections, that whispers of the years gone by, a sign of beautiful maturity. On the nose, it is a delicate symphony: notes of ripe red fruits, plum, and an unexpected touch of candied orange zest. Then, the tertiary bouquet reveals itself, with aromas of tobacco, leather and undergrowth, offering a soothing and controlled complexity. On the palate, the texture is soft, the tannins are perfectly integrated, caressing the palate without harshness. A well-present acidity supports the whole, guaranteeing beautiful freshness without aggressiveness. The persistence is discreet, leaving behind fruity and spicy memories, an elegant and deep imprint. This wine benefited from aging of at least 24 months in barrique, followed by bottle refinement, giving it that very particular patina.
This Cabreo Il Borgo 1985 is a wine that calls to be shared on special occasions. To fully appreciate it, I advise you to decant it carefully and serve it at a moderate temperature. It will pair wonderfully with flavorful dishes such as roasted red meats, a fine bistecca alla fiorentina, game or aged cheeses. It is a bottle that tells a story, an invitation to conviviality and to the discovery of the flavors of time. A true gem for epicureans in search of authenticity.
