Comment on noteThe wine
Imagine yourself in the heart of Tuscany, where the sun caresses the vines and where every sip tells a story. Today, I'm taking you to discover Folonari's Selvante 2020, a wine that perfectly embodies the elegance and depth of Cabernet Franc.
This wine was born on the lands of Castagneto Carducci, in the Tenuta di Campo al Mare, an estate where Folonari cultivates his vines with passion. It is here, in this part of Tuscany, that Cabernet Franc finds a particularly intense and refined expression. The 2020 vintage saw the birth of a 100% Cabernet Franc, a grape variety that, at these latitudes, reveals a unique personality.
To the eye, this Selvante reveals itself in a ruby robe of medium intensity, already promising beautiful complexity. On the nose, you will be charmed by aromas of ripe fruits, notably cherry and small red fruits, delicately enhanced by subtle spicy notes. On the palate, it offers a balanced structure, soft tannins and a pleasant freshness that invites tasting. Its vinification, with a maceration of about 30 days at controlled temperature and fermentation in steel, followed by 32 months of aging in small barrels of toasted oak (225-500 L) and 6 months of refinement, gives it this depth and very particular character, with typical Bolgheri accents.
This wine is an invitation to conviviality. I recommend it with grilled red meats, aged cheeses or charcuterie. It will also be perfect with pasta with red sauces or simmered dishes of family cuisine. Serve it between 16 and 18 °C, and don't hesitate to open it a few minutes before tasting so that it can fully express its aromas. Folonari's Selvante 2020 is a beautiful discovery, a wine that will transport you to the heart of Tuscany with every sip, without pretension but with certain authenticity.
