What wine pairings are recommended with Vermentino di Maremma?

Vermentino di Maremma pairs especially well with fish, seafood and shellfish: try it with grilled fish, clams, shrimp or fish cooked en papillote. Its freshness also suits bottarga and seafood antipasti. For a simple pairing, choose a dish that is light on sauce: a very creamy or heavily spiced preparation risks masking a young, light Vermentino.

It also works with vegetables in a tart or flan, fresh cheeses and marzolino, a Tuscan sheep's milk cheese. Cured meats can work as an aperitif, but their salty, fatty character pairs less easily with the most delicate cuvées. The wine's profile varies depending on the producer and ageing, so taste it before planning a strongly flavoured meal.

If you have a more structured version, you can serve it with white meat or a fresh blue-veined cheese: these pairings suit a light Vermentino less well, but the consorzio recommends them for fuller bottles. In short, for a lively, young cuvée, favour seafood and vegetables; for a richer version, you can go for more substantial dishes.

The smartest approach is to let the cuvée guide the menu rather than choosing the wine at the last moment: sometimes, a small change of bottle transforms the whole pairing.
