Comment on noteOur opinion
In Capodimonte, Pepe Nero is not just a simple trattoria. It's a fine dining establishment on the shores of Lake Bolsena, which has taken a sharp turn toward contemporary, territory-driven cuisine under the leadership of chef Salvo Cravero.
Here, you won't find Tuscan grandmother's cooking. The house offers a contemporary approach, based on local ingredients, seasonality and confident technique. Sources mention tasting menus, such as the "Percorso 4 portate" or the "Percorso 6 portate", which skillfully blend lake, sea and land — true gastronomic research.
Chef Salvo Cravero makes a point of showcasing local products. It's a refined and coherent cuisine that moves away from the traditional to embrace a more "fine dining" direction. Since November 2024, new management and a more assertive culinary line have been put in place, making Pepe Nero a point of reference in the Tuscia region and on Lake Bolsena.
If you're looking for an experience that goes beyond the ordinary, Pepe Nero is the place. It's not the address for Sunday ragù pasta, but for a culinary exploration that respects the terroir while elevating it. It's a table that dares, and for about €58 per person, it offers you a modern vision of local gastronomy.
