Comment on noteThe wine
Imagine for a moment Tuscany, not the one from postcards, but the more secret one, where time stretches out and where the vine whispers stories. It is there that I discovered Il Pareto 2011, a wine that perfectly embodies this duality between power and elegance, a true gem for those who know how to appreciate it.
This wine comes to us from the Tenuta di Nozzole, an iconic estate located in Greve in Chianti, in the very heart of Tuscany. The Folonari family cultivates the vines there with a passion passed down from generation to generation, anchoring each bottle in an exceptional terroir. It is in this privileged setting that Il Pareto is born, a Toscana Rosso I.G.T. that expresses all the richness of its origin.
Il Pareto 2011 is a pure Cabernet Sauvignon, a grape variety that, under the Tuscan sun, reveals a unique personality. Its vinification is meticulous: fermentation in steel tanks, followed by a maceration of about 22 days with délestage, allowing optimal extraction of aromas and colors. Then, the wine ages for 24 months in barriques, before refining for another 6 months in bottle, a necessary time to polish its tannins and develop its complexity. In your glass, you will discover a deep ruby color, heralding its structure. On the nose, it is a symphony of ripe red fruits, pomegranate, marasca cherry and dried plum, interwoven with more mysterious notes of incense, laurel and a hint of pepper. On the palate, the attack is ample and concentrated, the tannins are present but admirably integrated, carried by a beautiful sapidity. The finish is balanced, persistent, never falling into excess.
For me, Il Pareto 2011 calls for dishes worthy of it. I see it perfectly accompanying a hare in civet, with a cauliflower and truffle purée, a bold pairing that will showcase its depth. It will also be an ideal companion for roasted red meats or aged cheeses. It is a wine that should be served between 16 and 18 °C, and I advise you to open it a little in advance so that it can fully express itself. This is not a wine to drink in a hurry, but to savor, to share on special occasions, where each sip tells the story of an authentic and generous Tuscany. Il Pareto 2011 is an invitation to a sensory journey, an experience I strongly encourage you to live.
