Comment on noteThe wine
Imagine for a moment Tuscany, its gentle hills and its sun-drenched vineyards. That is where this wine comes from, an intense yet refined expression, promising you an authentic immersion in the heart of this generous land. It is not just a wine, it is an invitation to travel.
This Cabreo Il Borgo is the fruit of the Vigneti di elezione delle Tenute Folonari, located in Greve in Chianti. It is in this Tuscan cradle that Sangiovese, the region's emblematic grape variety, meets Cabernet Sauvignon and Merlot. These exceptional vines, cultivated with care, give birth to a wine that embodies the elegance and depth of its origin. Fermentation takes place in steel tanks, with maceration of about four weeks, allowing optimal extraction of aromas and colors.
In your glass, you will discover a deep ruby robe, sprinkled with subtle purplish hues, a promise of beautiful concentration. On the nose, a symphony of ripe red and black fruits offers itself to you: plum, cherry, but also rose. Then, more complex notes reveal themselves, spicy, with touches of chocolate, tobacco and vanilla. On the palate, the tannic structure is present but admirably integrated, offering a perfect balance between roundness and freshness. It is a harmonious tasting, without excess, that leaves you with a lasting sensation of pleasure. This wine has aged at least 24 months in barrique, thus refining its complexity and roundness.
This Cabreo Il Borgo, particularly in Magnum format, is a true ode to conviviality. I warmly recommend it with characterful dishes. Imagine it alongside a faraona ripiena di porcini e mirtilli, or with other roasted meats and game that are not too powerful. It will also enhance structured first courses and hard cheeses. Serve it between 16 and 18 °C and, if you have the time, do not hesitate to decant it for about thirty minutes so that it reveals all its aromatic nuances. It is a wine that will take you on a journey, a true gem of Tuscany that I am delighted to share with you.
