Comment on noteThe wine
I invite you to discover a gem, a wine that whispers the history and passion of Tuscany. Cabreo Il Borgo 2020 is not just a wine, it is an encounter with the elegance and depth of an exceptional terroir, a bottle that promises to transform every tasting into a privileged moment.
Nestled in the heart of Chianti Classico, in Greve in Chianti, the Folonari estate, through its Tenute del Cabreo, signs this wine that embodies the richness of this blessed land. It is no coincidence that this estate is renowned for its expertise, the fruit of a long winemaking tradition where every gesture is imbued with respect for the grape and the soil. Cabreo Il Borgo is a bold blend of grape varieties: 33% Sangiovese, 34% Cabernet Sauvignon and 33% Merlot. This composition, far from classic blends, gives the wine a unique personality, a perfect balance between the power of Sangiovese, the structure of Cabernet and the roundness of Merlot.
From the very first glance, its deep ruby color envelops you in a promise of complexity. On the nose, I perceive a delicate symphony: ripe red fruits, notes of wild berries, and a subtle touch of sweet spices. I also detect floral nuances, marasca cherry, a hint of incense and chocolate, enhanced by touches of tobacco and vanilla. It is a restrained and balanced olfactory profile, inviting discovery without ever being overwhelming. On the palate, this wine reveals a balanced structure. The tannins are silky, polished, and the taste progression is linear, favoring a harmonious cohesion between the fruit and a fine sapidity. The maceration lasts about four weeks, after fermentation in a steel tank, and the wine is then aged for at least 24 months in barrique, followed by bottle refinement, which gives it this depth and finesse.
This Cabreo Il Borgo is a true gastronomic chameleon. I warmly recommend it with arrosti, those traditional roasts that are the pride of Italian cuisine, or with selvaggina, feathered or furred game. It will also enhance red meats and aged cheeses, adding an extra dimension to your meals. Imagine it on your table during a dinner with friends, served at a moderate temperature to bring out all its nuances. It is an invitation to conviviality, a wine to be shared and savored, leaving an unforgettable memory. A bottle of this caliber is a promise of unforgettable moments, a true expression of the Tuscan art of living.
